Equipment:12-inch Wok or Cast iron dutch oven or heavy pot
Ingredients (for 12 persons):
Quantity Description 1 lb. Shrimp 4 lb. Red Snapper 6 Chicken Breasts 1 Onion, large 1 Green Onions, bunch 1 Red Bell Pepper 1 Green Pepper 1/4 Red Chili Pepper (optional) 8 or more Fresh Tomatoes, crushed 6 cloves Garlic 2 cups Water 2 tsp. Fines Herbes Salt to taste Pepper to taste Preparation:
Saute chicken breasts in olive oil and remove skins.
Saute snapper in olive oil very gently for a couple of minutes.
Saute onions and peppers in olive oil. Add tomatoes.
Throw everything together in the pot and simmer gently for 20-30 minutes.
